First BBQ of the season!

Hey everyone!,

Feeling a lot better from the last couple of days and since we've been so lucky with the weather (rare in Belgium) we were able to have our first bbq of the summer. Usually we have a lot of people over but because of the Corona scare, Bert and I had to make do with each other's company... :) It was a pretty great feeling be able to sit and eat outside and wear sandals... i'm hoping that it will continue to get warmer so I can start to wear summer dresses and shorts.

We started with grilling marinated tofu. The night before I had drained and cut up a large brick of tofu and let it sit in a sauce of sriracha, brown sugar, lime juice, honey, garlic,and a pinch of salt and pepper. Highly recommend this, because the tofu sucks up all the flavour!

In our bbq we had our veggies, sliced carrots and eggplant, with olive oil, salt, pepper, ras el hanout and a little bit of garlic powder. They take about 30 min to cook until soft (depending on how you prefer your veggies).

After 25 minutes into the veggie grilling we added our meat (pork back bone) that had also been marinated in soy sauce, garlic and brown sugar. You need to keep the lid close to create an oven effect.

Voila! The meat was perfect! Crispy outside and juicy inside!
